Ingredients
- 4 cups Arugula washed
- 1 Pear, thinly sliced Bosc or Anjou
- 1/4 cup Olive Oil extra virgin
- Juice of 1/2 a lemon
- 1 tbsp Raw Honey
- 1 tsp Dijon mustard
- 1/2 tsp sea salt & pepper or to taste
- 1/4 cup walnuts optional
Instructions
- Toss Arugula and Pear together
- Mix the olive oil, lemon juice, honey and mustard, salt & pepper and drizzle over salad
- Add walnuts if using

This salad is packed with nutrients and the pear and arugula is an excellent combination for your thyroid health.
