Arugula & Pear Salad

Ingredients

  • 4 cups Arugula washed
  • 1 Pear, thinly sliced Bosc or Anjou
  • 1/4 cup Olive Oil extra virgin
  • Juice of 1/2 a lemon
  • 1 tbsp Raw Honey
  • 1 tsp Dijon mustard
  • 1/2 tsp sea salt & pepper or to taste
  • 1/4 cup walnuts optional

Instructions

  • Toss Arugula and Pear together
  • Mix the olive oil, lemon juice, honey and mustard, salt & pepper and drizzle over salad
  • Add walnuts if using

Notes

This salad is packed with nutrients and the pear and arugula is an excellent combination for your thyroid health.
