Sweet Potato Hash

Ingredients

  • 2 tbsp olive oil
  • 1/2 onion
  • salt & pepper to taste
  • 1/2 tsp thyme
  • 1/2 tsp garlic powder
  • 2 Sweet potatoes

Instructions

  • Heat olive oil in pan over medium heat
  • Chop your onion and add to the heated pan, let them cook a little before adding other ingredients
  • Peel and dice your sweet potatoes in small bite size pieces, or put in a food chopper
  • Add chopped sweet potatoes and spices to pan with onions, stir together
  • Cook covered for 10 minutes, stirring frequently. Remove lid and raise heat to crisp for about 5 minutes until the potatoes are tender and slightly browned.

Notes

Sweet potatoes are loaded with vitamins and minerals, especially beta-carotene and lycopene. They also promote healthy bacteria in your gut and starve out the bad bacteria.  You can also make this recipe with white potatoes, which are also very nutritious, especially for its Lysine which fights cancers, inflammation and viruses in the body.  Onions are also great for anyone suffering from stomach issues, such as SIBO, helping to lower bad bacteria.
