Roasted Potatoes

Ingredients
- 6 Potatoes, washed and cut into wedges You can use white, sweet or a mixture of the two
- 1/4 cup Olive Oil drizzle slowly, only add enough to lightly coat them.
- 1 Onion, diced
- 1 tsp Sea salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp seasoning of your choice try steak seasonings or trader joe's 21 Seasoning Salute
Instructions
- Preheat oven to 400 degrees F
- Mix all ingredients in a large bowl
- Lay out on a baking sheet lined with parchment paper
- Cook for 20 minutes, then flip potatoesCook another 10- 20 minutes until lightly browned and a fork goes inserts easily
- Season with additional sea salt if needed
Notes
This is a great side dish that I make all the time, now that I don't make mashed potatoes with butter or milk. Try small red potatoes too, they cook up a little quicker so keep an eye on them. You can always lower the temperature for this recipe and cook longer if you are cooking with other foods, like a roast or chicken.
