Cinnamon Muffins

Ingredients
- 2 cups Tigernut flour Anthony's on Amazon is good
- 1/2 cup Cassava flour Anthony's on Amazon is good
- 1 tbsp unflavored gelatin I like Great Lakes gelatin on Amazon
- 1 tsp baking powder- aluminum free You can find at Trader Joes
- 1 tsp baking soda
- 3 tsp cinnamon
- 2 ripe bananas
- 1/2 cup coconut oil/ melted, but not hot
- 3 tbsp water
- 2 tbsp lemon juice
- 1/4 cup honey
Instructions
- Preheat oven to 350 degrees F and line muffin pan cups (use unbleached)
- Mix all dry ingredients; tigernut & cassava flours, gelatin, baking soda & powder, and cinnamon- break up any clumps from the tigernut flour
- Mash your bananas- A potato masher works great
- Add wet ingredients; bananas,coconut oil, water, lemon juice and honey
- Beat in mixer just until combined and moist
- Scoop out and distribute the batter into the muffin pans
- Bake for 25-30 minutes or until a toothpick comes out clean
Notes
Enjoy these healthy muffins for breakfast or a late day snack. You can add Enjoy Life chocolate chips for an added treat!
