Cinnamon Muffins

Ingredients

  • 2 cups Tigernut flour Anthony's on Amazon is good
  • 1/2 cup Cassava flour Anthony's on Amazon is good
  • 1 tbsp unflavored gelatin I like Great Lakes gelatin on Amazon
  • 1 tsp baking powder- aluminum free You can find at Trader Joes
  • 1 tsp baking soda
  • 3 tsp cinnamon
  • 2 ripe bananas
  • 1/2 cup coconut oil/ melted, but not hot
  • 3 tbsp water
  • 2 tbsp lemon juice
  • 1/4 cup honey

Instructions

  • Preheat oven to 350 degrees F and line muffin pan cups (use unbleached)
  • Mix all dry ingredients; tigernut & cassava flours, gelatin, baking soda & powder, and cinnamon- break up any clumps from the tigernut flour
  • Mash your bananas- A potato masher works great
  • Add wet ingredients; bananas,coconut oil, water, lemon juice and honey
  • Beat in mixer just until combined and moist
  • Scoop out and distribute the batter into the muffin pans
  • Bake for 25-30 minutes or until a toothpick comes out clean

Notes

Enjoy these healthy muffins for breakfast or a late day snack.  You can add Enjoy Life chocolate chips for an added treat!
